Business Owner - Cerys Jones
Business owner Cerys formed The Braybrooke Pub Company at the start of 2019 with a young team who are equally as passionate about amazing food and great customer service. Cerys is both a Braybrooke resident and a hospitality professional with over 20 years’ experience in hotel management, corporate catering and high profile events - including work with the Princes Trust.
The team’s vision is to create a place that feels like home - the perfect combination of warmth, good company and great food. However, we do not restrict ourselves to The Swan itself, in fact The Braybrooke Pub Company is much more... we pride ourselves on taking our vision and using it to create outstanding events, whether it be in the grounds of The Swan providing a marquee seating up to 100 people, or bringing our events team to you - where we can provide a full catering service, outside bar, marquee, entertainment and much more.

Head chef - Louis Martin
Louis Martin joined The Braybrooke Pub Company in 2019 as Executive Chef; responsible for the food delivery at The Swan and outside catering operation. Louis first hit the radar of business owner Cerys whilst working in some of London’s most up and coming restaurants and it wasn’t long before he was invited to come on board.
Louis and his team take great pride in working with the best local suppliers to create delicious and diverse dishes for our seasonal menus, daily specials and bespoke events. Our style can be described as ‘contemporary classics’ with our aim to produce affordable luxury dining; from Cornish inspired seafood dishes through to top quality steaks and local game when in season.
We are happy to accommodate dietary requirements wherever possible and offer gluten free and vegan options on a daily basis.
